SPELLET FLOUR

Whole grain spelled flour is extremely good for the treatment of intestinal diseases and metabolic disorders, as it has up to 70% less gluten than wheat flour, and is also rich in selenium, which is generally known to protect against cancer, so this type of grinding, known as “cold milling”, preserves all the nutritional properties of spelled grains.

When spelled is ground, spelled flour is obtained, which has a sweet and nutty taste. Spelled flour is used in the same way as wheat flour, and differs in that the final bakery products are fuller in flavor and more like wholemeal dough.
